Our Gluten-Free Measure for Measure Flour already includes xanthan gum and is designed to be a direct 1:1 substitute for conventional flour in non-yeasted recipes like cookies, cakes, and muffins. Our Gluten-Free All-Purpose Flour does not contain xanthan gum and is ideal for recipes that specifically call for a gluten-free flour blend, especially yeasted recipes where you need to control the amount of xanthan gum added.
