Preheat and prep. Preheat your oven to 375ยฐF and line or grease a cupcake pan.
Make the batter. In a large bowl, mix the pumpkin puree, oil, eggs, muffin mix, and pumpkin pie spice until well combined. Let the batter rest for 10 minutes. This gives the gluten-free flours time to hydrate, which means a softer, less gritty muffin.
Make the filling. While the batter rests, beat the cream cheese, sugar, and vanilla together in a separate bowl until smooth and creamy. Spoon it into a piping bag, or a zip-top bag with the corner snipped off.
Fill the pan. Spoon the pumpkin batter into the cupcake cups.
Pipe in the cream cheese. Pipe a generous swirl of filling into the center of each muffin.
Bake. Bake for 18 to 22 minutes, until the muffins spring back when lightly touched.
Cool. Let them cool in the pan for a few minutes, then move them to a wire rack.
Tips for the best muffins
